As a first-generation farmer, I’ve come to deeply appreciate the intensely cyclical nature of the natural world. Just the other day, I was struck by the sight of those tiny carrot seeds, bursting with expectant energy, as they arrived at our farm. I couldn’t help but marvel at the miracle of transformation – from those diminutive specks to the vibrant, juicy roots that will eventually grace the plates of our community.

Now, with the arrival of summer, the tables have turned – quite literally. My fridge is overflowing with an abundance of leafy greens, each one boasting its own unique flavor profile. And instead of reaching for those root veggies, I find myself whipping up creative salad dressings to complement the parade of seasonal produce.
Take, for instance, the humble radish – a vegetable that has recently taken center stage in my kitchen. These zesty beauties are not only antioxidant-rich and high in vitamins, but they also offer an exciting textural contrast to my summer salads. And the best part? I can utilize the entire plant, from the crunchy bulb to the tender leaves.
Versatile Veggies and Flavor-Packed Pesto

I love how quickly it cooks up, retaining its delightful texture and taste. But my personal favorite way to enjoy tatsoi is blended into a zesty, vegan pesto. The combination of its vibrant greens, with the richness of cashews and a touch of nutritional yeast, creates a flavor sensation that keeps me coming back for more.
