I don’t know about you, but whenever I open up my weekly CSA box, I feel like a kid on Christmas morning. What on earth am I going to do with all these veggies?

Well, fear not, my friends. I’m here to share with you one of my favorite ways to showcase the goodness of my CSA haul: the Abundance Bowl. Now, I know what you might be thinking – “Another fancy-schmancy meal that’s going to take hours to prepare?” But I assure you, these bowls are anything but complicated. In fact, they’re the ultimate in simple, nourishing, and delicious.

Keeping it Simple, Keeping it Satisfying

The beauty of the Abundance Bowl lies in its simplicity. It’s really just a matter of taking whatever fresh, seasonal produce you’ve got on hand, cooking it up in one pot, and then dressing it all up with a flavorful sauce. No fussy techniques, no hours spent in the kitchen – just good, honest food that’s going to leave you feeling satisfied and grateful for the abundance of your CSA.

One of my go-to Abundance Bowl recipes is this Winter Wonderland version, featuring a bounty of seasonal veggies like sweet potatoes, broccoli, and cabbage, all nestled atop a bed of hearty brown rice and lentils. And let me tell you, the real showstopper here is the Garlic-Ginger Pumpkin Seed Sauce. It’s creamy, it’s tangy, it’s got a little kick of heat – and it’s the perfect way to tie all those flavors and textures together.

  4. And last but not least, blend up that irresistible Garlic-Ginger Pumpkin Seed Sauce. This takes all of 5 minutes, and you can even make a big batch to use throughout the week.

It’s as simple as that! Just layer everything in a bowl, drizzle on that creamy, flavorful sauce, and you’ve got yourself one seriously nourishing and satisfying meal.
